Banana Bread

  • 180 g butter
  • 1 1/4 cup sugar
  • 3 eggs
  • 2 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1 ml salt
  • 1 can evaporated milk
  • 1 tsp bicarb
  • 1 tsp vanilla essence
  • 1 cup mashed banana
  • 2/3 cup chopped pecans

  • 6 oz butter
  • 1 1/4 cup sugar
  • 3 eggs
  • 2 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1 ml salt
  • 1 can evaporated milk
  • 1 tsp bicarb
  • 1 tsp vanilla essence
  • 1 cup mashed banana
  • 2/3 cup chopped pecans

 

 

Instructions

  1. Preheat oven to 180˚C (350˚F). Line with wax paper and then grease 2 large loaf pans.

  2. Cream butter and sugar together in a bowl, then lightly beat in the eggs.

  3. Mix together ideal milk, bicarb and vanilla. Sift flour, baking powder and salt together and mix into the butter and sugar with the ideal milk mixture.

  4. Stir in the bananas and the nuts.

  5. Pour into prepared pans and bake for 45-60 minutes, until golden brown. Allow to cool before serving.
